Immersive paddock-to-plate restaurant BASK ignites destination dining on the Sunshine Coast

Pairing exceptional produce with world-class innovation, BASK Restaurant is a celebration of the Sunshine Coast’s culinary riches.

Tucked within Peregian Village Square in the heart of Peregian Beach, the two Chef-Hatted restaurant is now welcoming guests for lunch and dinner after relocating its acclaimed fine dining experience from the town of Eumundi.

An elegant and expansive new home that opens to al fresco seating nestled within the boutique beachfront enclave of Peregian Beach Village, has been inspired by the leisurely ambience of traditional European dining.

Owner and Executive Chef Jack Madden, who has worked in global kitchens including Scotland’s Edinburgh Castle where he cooked for Queen Elizabeth II and Prince Phillip, is committed to showcasing the coastal region’s freshest seasonal ingredients through a creative lens. A chef for more than 20 years, Chef Madden’s signature paddock-to-plate menu is ever-evolving, layered with robust flavours and internationally refined technique.

From a crowd-winning sous vide octopus, chargrilled and tossed with limoncello, black pepper, fennel, radicchio and citrus, to a rich 9+ Grade Wagyu fillet served with braised vegetables and duck fat roasted potato gratin, each plate serves as a homage to the Sunshine Coast’s esteemed farmers and producers.

Meticulously sourced for their freshness and vigorous flavour, high quality seasonal ingredients are the cornerstone of every BASK creation. Offering a menu that champions local businesses and morphs to the rhythm of the seasons, Chef Madden and his team relentlessly experiment with new techniques and decorative expression. A diverse wine list compliments BASK’s seasonal menu, spanning classic and unique local and international drops. Favouring craftsmanship with minimal intervention, every bottle is hand-selected for its harmonious pairing with the menu’s distinct flavours.

The restaurant’s prime location proximal to the beach further embraces its surroundings, allowing diners to breathe in the region’s natural splendour while savouring it. Chef Madden’s wife, BASK Owner and interior designer Jess Coolican, brings her exemplary design talents to the restaurant’s aesthetic, crafting a welcoming and sophisticated contemporary space. An expert blend of warm timbers, high-shine counters and benchtops and scattered blooms and greenery evoke an inescapable calm. Meanwhile, textured furnishings, homely artworks and a refined palette of earthy hues weave remarkable warmth.

Anchored deeply through heartfelt hospitality, BASK takes pride in offering an inviting space for people to share their passion for food and deepen their connections over languishing dining. Committed advocates for the art of long lunching, the BASK team are all equally passionate about crafting dining experiences and memories which extend their service beyond polite assistance. Thoroughly enjoyed meals and gatherings that linger are highly encouraged.

A weekend a la carte brunch series takes centre stage at BASK on Sundays with an 11am and 1pm sitting featuring bespoke table linen and a seasonally curated menu which changes regularly. For $35 per head, guests can also enjoy access to a Bottomless House Spritz Bar over the course of their sitting. In 2024, BASK will also play home to a series of events including wine luncheons and dinners as well as special occasion celebrations. Event-specific details will be released throughout the year.

BASK attracted rapid success when it first opened in Eumundi as a small alfresco eatery in 2021. It was originally intended as a pop-up venue that operated once monthly however strong demand quickly propelled BASK to a regular three-day-per-week venture. Within 18 months of opening its doors on Memorial Drive, BASK was awarded an Australian Good Food Guide Chef’s Hat amid widespread acclaim throughout the country.

Biography Introducing Chef Jack Madden

Driven to unearth the unique flavours of his natural surroundings, Jack Madden has honed his craft as a chef over the course of the last 20 years. While completing a degree in Environmental Engineering at Brisbane’s Griffith University, a part-time job at a local Italian restaurant opened his eyes to the world of cooking.

He soon developed a passion for culinary invention, kick starting an apprenticeship with Chef Russell Armstrong in 2004 at Seasalt at Armstrongs in Brisbane. A growing appreciation for local produce eventually lured Madden to Queensland’s Sunshine Coast,, and he began working as Chef de Partie at Noosa’s Bistro C in 2007. It was there he met his now-wife, interior designer Jess Coolican, and together they travelled abroad for several years as Madden finessed his culinary skills.

In 2008, Madden worked as Chef de Partie at Scotland’s Edinburgh Castle, cooking for Queen Elizabeth II and Prince Phillip amongst others. Madden then returned to Australia and settled in Melbourne where he spent eight years working in some of Melbourne’s best Asian and seafood restaurants.

He served as Chef de Partie in 2011 at the two Chef’s-Hatted Pearl Restaurant + Bar alongside Chef Geoff Lindsay. In 2019, he returned to the Sunshine Coast, taking a lead role in the kitchen at Noosa’s Sails Restaurant.

In 2021, Madden and his wife opened BASK Eumundi and within 18 months, the restaurant received an Australian Good Food Guide Chef’s Hat of their own. In need of more space to grow, the pair relocated their vision to BASK Peregian Beach in November 2023. Under Madden’s leadership, BASK was awarded two Chef’s Hats within the first six months of operations.

The chef likes to switch off during his down time by bike riding and beach hopping with his wife and two young daughters. He also enjoys a quiet beer over a fire out the back of his family’s Eumundi home.
